What You’ll Need

  • 2 medium carrots, boiled and mashed

  • 1 tin of chickpeas (400g), drained and mashed

  • 100g grated cheese (cheddar works great)

  • 2–3 tablespoons breadcrumbs (plus a little extra for rolling)

  • 1 teaspoon mild seasoning (paprika or mixed herbs – optional)

  • A drizzle of olive oil for baking

Step-by-Step Method

  1. Mash it up – In a big bowl, mash the carrots and chickpeas together until smooth.

  2. Mix the magic – Add in the grated cheese, breadcrumbs, and seasoning. Stir well until everything sticks together.

  3. Shape the balls – With clean hands, roll small bite-sized balls. Kids love helping with this part!

  4. Coat & crunch – Roll each ball in a little extra breadcrumb for a crispy coating.

  5. Bake – Place on a tray lined with baking paper, drizzle with olive oil, and bake at 180°C (fan) for 15–20 minutes until golden. Or in the air fryer 180°C for 13 minutes.
